I think the preferences might of reset when Kris updated the MediaWiki? I don't believe there is a way to make the timestamps uniform. They reflect the user that entered them. (Thanks for noting mine was CST, I'm actually EST GMT - 5) You can always view the local time for edits by reviewing the history.
